Lemon Orzo Chicken Soup

It’s that time of year where we are all trying out the idea of eating healthier and being “better”. It can also be the time where all I want to do is sit under a blanket, watch Netflix and shovel warm brownies in. Let’s be honest here. But, one cannot do that the entire month of January, sounds fun but really not good idea (ha!). So as our temps dip lower, it keeps me in a soup frame of mind. There is something about how it warms your insides, leaving you with this satisfying and content feeling. Meet my latest number, lemon orzo chicken soup. You will be glad you did.

I love lemon and especially enjoy it paired with chicken. As the cravings have been intense for soup lately, thankful I’ve moved past the peppermint brownies, I was not disappointed with this one. The flavors are fresh, clean and completely fulfilling. Y’all, I really don’t think I am that good of a soup maker, not like my mother anyways. She can crank out some incredible pots of deliciousness, oh my word! But this was a different story. It’s simple and can be altered to whatever diet path you are on. As we are about to enter into a wintery weekend, it is a perfect time to enjoy a big bowl of piping hot lemon orzo chicken soup. Stay warm! Happy eating!

Lemon Orzo Chicken Soup

Ingredients

  • 2 tablespoons of olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and chopped
  • 2 cloves of garlic, minced
  • 2 celery stalks, chopped
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried ginger
  • 8 cups of chicken broth {homemade or store bought}
  • 3 chicken breasts* {shredded or chopped}
  • Zest of 2 lemons
  • Juice of 2 lemons
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper
  • 3/4 cup uncooked orzo

Directions

  1. In a large heavy pot, saute the onion, carrots, garlic and celery with olive oil all together until tender. About 5 minutes.
  2. Sprinkle salt, pepper, parsley, thyme, rosemary and ginger over the veggies. Stir till fragrant.
  3. Add the lemon zest and juice, chicken broth, garlic powder, onion powder and chopped chicken. Simmer for a few minutes.
  4. Add orzo, cover and let simmer for 8 minutes.

Note:
*I roasted the chicken breasts prior to making the soup. I love the flavors that roasting brings out in the chicken.
*Soup only got better the longer it sat and the flavors had time to blend together.
