Chicken Meatballs

We eat a lot of chicken in our house, and sadly my crew gets very tired of most of the variations I come up. Except this one, these chicken meatballs, are a family favorite! Even B. Perdy friends love to enjoy when they come for dinner.

Chicken meatballs are a great twist on a classic, a little lighter in taste but not in flavor. Serve over a bed of pasta with a salad alongside and you will have a great meal this week. Happy eating!

Chicken Meatballs

Ingredients

Sauce

  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon crushed oregano
  • 1 teaspoon crushed basil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Meatballs

  • 1/2 cup dried panko
  • 2 teaspoons onion powder
  • 1 teaspoon parsley
  • 1 teaspoon basil
  • 1/2 cup freshly grated Parmesan cheese
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cloves garlic, minced
  • 1 large egg, lightly beaten
  • 1 1/2 pounds ground chicken
  • Olive oil
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese

Directions

  1. To make the sauce, add all the ingredients together and let simmer for a couple of hours in a medium saucepan on the stove.
  2. Preheat oven to 400.
  3. To make the meatballs, combine the panko, onion, parsley, basil, Parmesan cheese, salt, pepper, garlic, egg and chicken. Stir together until well blended.
  4. Form the mixture into meatballs about 1 1/2 inch in diameter.
  5. Heat a large Dutch oven over medium high heat on the stove. Drizzle with olive oil in the pan.
  6. Add the meatballs into the pan in a single layer, and let cook until all sides are browned.
  7. This might take two batches to get all the meatballs cooked.
  8. Remove the meatballs from the pan.
  9. Pour the sauce that has been simmering into the bottom of the pan.
  10. Place the meatballs on top of the sauce and sprinkle the mozzarella and Parmesan cheeses over top.
  11. Sprinkle a dash of salt and garlic powder over the meatballs. Also add some chopped fresh basil on top.
  12. Bake for 15 minutes or until the cheese is lightly browned.
