Happy National Peanut Butter Day! I love that there are food “holidays”, just sayin’. I literally eat peanut butter everyday, usually at breakfast, in the form of a pb and banana/honey sandwich. When one of my fav gal pals Julia Stevens told me about these energy bites, I was quite excited. These are super tasty and give you a little extra pep in your step.
Energy Bites
1/2 cup peanut butter
1 cup quick cooking oats
1/3 cup honey
1/2 cup chocolate chips
1/2 cup ground flaxseed
1 tablespoon chia seeds
1 tablespoon vanilla extract
Combine all ingredients in a large bowl until thoroughly mixed well. Roll the mixture into small bite size balls. Refrigerate for at least 30 minutes before eating. Store in an airtight container in the refrigerator.
