Pumpkin Bread

It is that time of year when I want all things pumpkin! It is like I can’t get enough! One of my favorites is pumpkin bread, which happens to also be one of Elizabeth Sweatt’s favorites. She loves to bake this delicious recipe for her family and friends.

I love finding new recipes, especially during the holidays, and trying each one out. When Elizabeth mentioned she had a pumpkin bread recipe, I couldn’t wait to get my hands on it. I was very pleased with the outcome, as will you. The recipe makes two loaves, so keep one and share the other with a friend. A slice cut straight out of the oven is my favorite way to eat it, especially if you put a little bit of butter on it. Warm, full of cinnamon and pumpkin flavors will entice you to make another batch. It is super simple and can come together if you are in a pinch for time. Savor each bite, which I would recommend with a cup of hot coffee.

Pumpkin Bread 

3 1/3 cups flour

3 cups sugar

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon nutmeg

1 teaspoon salt

1 teaspoon vanilla

1 cup oil

1 can pumpkin

4 eggs

2/3 cup water

Preheat oven to 350. Spray 2 loaf pans, and set aside. Mix together flour, sugar, soda, cinnamon, nutmeg and salt. Add the vanilla, oil, pumpkin, eggs and water to mixture. Pour into prepared pans and bake for 1 hour.
